Chez Cheese owners Pat Lamson and her brother Peter Quinn are known for their fine cheeses, healthy cooking and excellent catering.
Lamson started her career as a shopkeeper working part-time in the store when her brother had a different partner. When the original partner decided to sell, she told Pat “You should buy it.”
She did, and she’s been cooking and serving food seven days a week, with the same love and care she would use in serving her own family, but on a large scale.
“I like my work, I like my product, and I like my customers,” Lamson said. “We do a big lunch business. We prepare three or four soups a day.”
The restaurant’s menu is online, and is changed weekly to show the daily specials.
Butternut squash soup is so popular, she said, they make it every day. There are eight tables, so customers can grab lunch to go or sit down and have a quick bite.
Chez Cheeze also makes three or four different chicken entrees every day. Dinner to go is quite popular. You can order everything from entrees to vegetables to salads. Phone ahead, and it will be ready to pick up when you get there.
Roasted and steamed vegetables are very popular, she said, as are roasted salmon and multi-grain breads and rolls.
Chez Cheese makes up several specialty products: sun-dried tomato basil torte, which layers goat cheese, swiss cheese, sun dried tomatoes and pesto; a black caviar log, and a fruit-and-nut log.
It also does large-scale catering, to order. They don’t deliver, except for catering.
“Many of our customers are interested in healthier eating, so we emphasize cooking methods that are lower in fats,” she said.
